You’ll want to visit the Windward Plains to find Ceratonoths, which are quite plentiful there. To locate them, open your map, apply the icon filter, and pinpoint them on your map—whether they are male or female doesn’t make a difference—and then set a waypoint to track your quarry.
It’s worth noting that you won’t find herbivore carapaces as rewards from hunts, nor do any large monsters drop them. Your best bet is to go after those Ceratonoths.
